DOUBLE CHOCOLATE CHIP COOKIES

Today's blog post is my own recipe that I've used plenty of times to create my own double chocolate chip cookies, using both milk and white chocolate! To make these I've mixed several recipes that I've seen to create (what I think) to be the BEST cookies ever! All the ingredients are easily sourced and they're super easy to make!


First of all you obviously want to grab some scales and a mixing bowl. You also want some spoons and a bowl to measure the ingredients in!

To make these chocolate chip cookies you'll need:
225g unsalted butter
300g caster sugar
1 tea spoon vanilla extract
2 eggs
250g plain flour
55g cocca
3/4 teaspoon bicarbonate of soda
1/2 teaspoon salt
100g milk chocolate chips
100g white chocolate chips
(Makes minimum of 12 - can make into smaller cookies to stretch to 25)



So before you start measuring or mixing you're going to want to pre-heat your oven to 170 C (Gas mark 3). You'll also want to grab an oven proof tray (I use a pyrex glass oven tray), over this tray cut some grease proof paper to suit.

Sift together the plain flour, bicarbonate of soda, cocoa and salt. Set this aside to add to the mixture later on.
What you're going to want to do now is measure out the butter and warm it up in the microwave so that it is soft (this makes it easier to mix with). In the mixing bowl, cream together the soft butter and caster sugar; do so until creamy.
Beat in the vanilla extract and eggs with the butter and caster sugar - this should all be mixed together well.
Next you want to mix in the sifted ingredients you set aside at the beginning. Do this until just blended.


Once just blended add in both the milk and white chocolate chips and stir until they're equal throughout the mixture.
Drop cookie dough onto the prepared baking trays (personally I use 1 table spoon sized piles).
DO NOT TRY TO FLATTEN MIXTURE. 
Cook in oven for 15 - 20 minutes, or until edges are slightly toasted.
Leave them to cool on racks and you're done!
